The Fat Duck's chef Heston Blumenthal Working on Hospital Meals
Heston Blumenthal, the chef of the award-winning restaurant “The Fat Duck", has a new ambition. The Brit will make seniors enjoy again their hospital meals. He will bring back traditional British cooking with a new look.
Blumenthal thinks that the taste buds of most elderly people do not fully function anymore. If moreover they're also sick and need to swallow medication, it could worsen, with a possible risk of malnutrition. Bland meals are past. The chef will star alongside sweet, sour, bitter and salt the fifth taste: umami. This is found in old cheese, tomatoes, Parmesan cheese, breast milk and seaweed.
